Twice Baked Potatoes

Servings 4 People


  • 4 Large Baking Potatoes
  • 2 Tbs Butter
  • 1 Tsp Pepper extra as desired
  • 1/4 Tsp Salt extra as desired
  • 1/4 Tsp Garlic Salt
  • 1/4 Tsp Onion Powder
  • 2 Tbs Olive Oil
  • Cheddar Cheese as desired
  • Fresh Parsley as desired


  • Preheat oven to 425°.
  • Rinse and pierce potatoes.
  • Microwave potatoes for 8-12 minutes.
  • Line baking sheet with foil and evenly coat with cooking spray.
  • Bake potatoes for 15 minutes.
  • Remove and let sit about 5 minutes, or until you are able to touch.
  • Slice the tops off and scoop pulp into a bowl.
  • Mash the pulp and mix in butter and seasonings.
  • Brush outside of potato skins with olive oil.
  • Season skins with additional salt and pepper.
  • Spoon pulp back into the skins.
  • Bake another 15 minutes.
  • Garnish with cheddar cheese and parsley.


Mix in bacon, sour cream, ranch dressing, any baked potato toppings.
