Instructions
  1. Spray 8” pie pan with cooking spray.
  2. Mix graham cracker crumbs, sugar and butter until combined.
  3. Press mixture into pan.
  4. Refrigerate one hour.
  5. Stir yolk and brush over the crust.
  6. Heat oven to 350°. Allow crust to come to room temperature while oven is heating.
  7. Bake 10 minutes.
  8. Allow to cool completely before filling.
Recipe Notes

It takes about 9 full graham crackers to crush into the 1 ½ cups. With the sugar, you may mix in spices for additional flavor. For a regular cheesecake, vanilla pie or banana pie, a tsp of cinnamon; for an apple pie type of filling, use ½ tsp cinnamon and ½ tsp nutmeg. You could even mix in some small chocolate chips or chocolate shavings for a chocolate pie. For tips on making the egg yolk brushing a bit easier, see the post. For a very quick pie, make your favorite pudding and just fill in the crust. I know it sounds really basic, but chocolate pudding in a graham crust is delicious.
