The week before I made this, I had traveled about 3 hours per day, 4 days out of that week to see several of my nephews graduate various levels of school. Plus, my eldest nephew had asked me to make his High School graduation-party cake, so any time I wasn’t traveling was spent in the kitchen perfecting the cake and decorations. So I was tired and stressed and spread real thin. You’d think I’d be used to it by now, that is pretty much my default setting. Because I was so wrapped up in all of these things, I was too distracted to get Mike a real gift for Father’s Day. Which was extra crushing because he and the Little One really thought of me on Mother’s Day. I got gifts and we had Family Night and I’m sure there was chocolate… So my way to make it up was to spend the day in the kitchen making Mike various yummies while he played GTA on his PS4. He got to relax and enjoy his day, so it was worth it. I figured for brunch, we’d start with this Pancake BLT because everyone looooves bacon! Except me…and my sister. But, Mike goes crazy for it. And our Little One. They’re little bacon monsters. If you happen to follow us on Instagram, Twitter or Facebook, you would’ve seen the Pancake BLT I posted on Father’s Day. And this is your how-to!
Warning: There are many, many, many yummy photos. I just couldn’t decide between them all!
First, we make the pancakes. Start by mixing the flour, sugar, baking powder and salt.
Using a spoon, stir the center of the flour mixture to create a well. Then, in another bowl, mix milk, egg and vanilla extract.
Slowly pour the milk mixture into the well you’ve created in the flour. Followed by the melted butter.
Then starting from the center of the well, gently whisk the mixture into the flour. This is best done by forming small circles from the center and working outward.
Like most pancake batter, it will be slightly lumpy. Lightly grease the skillet, I usually stick with cooking spray or vegetable oil. Heat the skillet to medium. Wait to add batter to skillet until it is heated. You can test this by splashing a drop of water onto the skillet, it will sizzle when ready.
This recipe makes 4 pancakes. Divide the batter evenly, which will be approximately ¼ cup, and pour batter onto the pan. Pancakes are ready to flip when edges slightly begin to bubble. This takes about 1-2 minutes.
Now, for the sandwich. The pancakes are the bread! Spread mayo on 2 of the pancakes and season with pepper, as desired. I call these the “bottoms”.
Next, is the BACON. Fully cooked, and seasoned if desired. Half each slice so that it will all fit on your pancake. Place 3 pieces of bacon on top of mayonnaise on the “bottoms” of each sandwich. Then take remaining 3 bacon halves and weave into the 3 on the pancake.
On remaining 2 pancakes, spread mayonnaise as desired and sprinkle with pepper. These are your “tops”. Then we layer. Lettuce, salted tomato halves, maybe even some avocado. I didn’t get to use my avocado on this one. Booo. Then you sandwich the top and bottom together and you have a yummy Pancake BLT. - 1/2 Cup Flour
- 1 Tbsp Granulated Sugar
- 1 Tsp Baking Powder
- Pinch Salt
- 1/8 Tsp Vanilla Extract
- 1/3 Cup Milk
- 1 Egg
- 1 Tbsp Butter melted
- 3-5 Tbsp Mayonnaise
- Salt & Pepper to taste
- 6 Slices Bacon fully cooked
- 6 Cherry Tomatoes halved
- Lettuce if desired
- 1/2 Large Avocado ripe, sliced as desired
- In a large bowl, mix flour, sugar, baking powder and salt.
- In a separate bowl, mix milk, egg and vanilla extract.
- Create a well in the center of the flour.
- Pour milk mixture into this well.
- Pour melted butter into well.
- Whisk milk mixture, butter and flour mixture, starting from the center of the well and working outward. Batter will be slightly lumpy.
- Heat lightly oiled skillet to medium.
- Pour ¼ cup of batter onto pan and cook 1-2 minutes each side. Pancakes are ready to flip when edges slightly begin to bubble.
- Repeat step 8 for all remaining batter.
- For sandwiches, spread desired amount of mayonnaise on top of 2 pancakes and sprinkle with pepper. These will be the “bottoms”.
- Cut each slice of bacon in half to allow for them to fit on the pancake.
- Place 3 pieces of bacon on top of mayonnaise on the “bottoms”, for each sandwich.
- Take remaining 3 bacon halves and weave into the 3 on the pancake.
- On remaining 2 pancakes, spread mayonnaise as desired and sprinkle with pepper. These are your “tops”
- Divide lettuce between the 2 “tops” , place on mayo.
- Salt the inside of the tomato halves and set on top of the lettuce.
- Garnish with avocado slices, if desired.
- Place “tops” onto the “bottoms” to make a sandwich.
