I was first introduced to Jerk Chicken in 2017. We closed on our house in May 2017, and as anyone does right after they buy their first house, Crys went on a vacation to Jamaica with a girlfriend. I stayed behind to stain our kitchen cabinets and get the house a little closer to move-in ready, I wasn’t the least bit jealous!!! Cuz who would be? Anyway…one good thing that came out of the trip, she came back with some authentic Jerk seasoning. I’ve tried a couple different brands since, but none compare to Grace Hot Jamaican Jerk Seasoning, https://gracefoods.com/jerk (this is not an affiliate link, we make no money based on this recommendation, I just really love it!).
WARNING: This recipe is Spicy! The amount of the Jerk Seasoning you use will directly impact the heat of the final product.
Let me add, making this marinade is so easy, and the final product is soooo adaptable. I like to make this on the weekend for lunches the week ahead, but it does very well as an entree for dinner (my thoughts trail off thinking about making a Jerk Chicken Sandwich – we’ll see).
The flavor of the marinade sets in as little as thirty minutes. For the sake of this post, I marinaded for about two hours.
While I was at it I prepped some red and green bell pepper and some white onion. I grilled these as well, very similar to my Broccoli Foil Packets. For the peppers and onions, I sliced into strips, placed them in my foil packet base, added salt, pepper, and one tablespoon of butter. Seal it!
While both the chicken and the peppers were…chilling…on the grill, I made up about two cups of plain white rice (planning to separate into quarters for my bowls). Once the chicken is done on the grill I bring everything in and divvy the peppers into my bowls. To clarify, I grill the foil packets for the same amount of time as the chicken. This seems to work out well for the final result. I then sliced up the chicken for the bowls, let the whole bowl cool, and refrigerate.
As you can see here the final product, either plated or bowl prepped, looks delicious!
Note: To reheat (at work), I microwave approximately 1:30 – 2:00 based on the microwave. Four days into the week and the chicken still tastes fresh and the whole bowl is still amazing.

Jerk Chicken (and Meal Prep Bowl)
Ingredients
- 2 Boneless Skinless Chicken Breasts
- 2 Tsp Jerk Seasoning
- 2 Tsp BBQ Sauce
- 2 Dashes Worcestershire Sauce
- 1/4 Tsp Soy Sauce
- 1 Tbsp Olive Oil
Instructions
- Mix Oil, BBQ sauce and all seasonings together.
- Place in your preferred marinade container (I use a big ziploc bag)
- Marinade for 30 minute to 4 hours (You can try for longer, I just haven’t tested beyond that)
- Grill for 6-8 minutes on each side, turning as little as possible
