Cajun Fried Pickles

Crys and I love fried pickles. Whenever we go out it’s a challenge not to order a serving of them. Whenever we find something we enjoy, I have a compulsion to make it and home…and make it better, of course. That is where these Cajun Fried Pickles come in. I found a couple different recipes for fried pickles to get a sense of how they’re put together, then came up with this.

As we like to do, we start with getting all our ingredients together. For the Cajun Seasoning we used http://www.weberseasonings.com/product/norleans-cajun-seasoning, but keep an eye out in the future for a cajun seasoning from scratch. Right now life is just too hectic to pass up the convenience of a premade seasoning.

I like to start by prepping the pickles. As an experiment today, we went with pre-sliced dill sandwich chips AND I sliced up some little mini dill pickles because I wanted to try playing with the thickness of the pickle (can you tell we’ve made these more than once). Once you have your pickles together its good to lay them out on paper towels to dry, this will help with the next steps.

Next up is the batter. Whisk together all the batter ingredients until almost entirely smooth. In a separate container, prep your breadcrumbs. I like to use Italian bread crumbs, mostly because we always seem to have them (keep an eye out for a meatball recipe coming soon).

Once I’m prepped and ready to go, I dip a pickle slice into the batter then into the breadcrumbs. Toss some crumbs onto the top to make sure it’s well coated. I like to leave the slice in there and start dipping the next. I do about 5-8 slices into the crumbs at a time.

From there you can start dropping them into your preheated oil. Keep the quantity manageable is important. I’ve found that these do come out better if you turn them after cooking a couple minutes. While these are frying I’ll prep the next round of pickles in the batter then breadcrumbs.

Once they’ve cooked all around you can pull them and let them dry and cool on a paper towel. After you’ve gone through your whole batch, it’s time to enjoy. Crys and I both love to dip these in ranch, and I promise you, they will go so fast. For the sake of this post I made about 30-40, and between myself, Crys, and The Kiddo, they were gone in about a minute (don’t judge).

Cajun Fried Pickles

Ingredients

  • Pickle Slices quantity based on preference (quantities listed were enough for about 30 slices)
  • 1 Cup Bread Crumbs

Batter

  • 1 Cup Milk
  • 1 Cup All Purpose Flour
  • 1 Tsp Baking Powder
  • 1 Egg
  • 2 Tsp Cajun Seasoning

Instructions

  • Preheat your frying oil to 350°
  • Combine all batter ingredients
  • Dip each pickle into the batter, then into the bread crumbs. Let sit for about a minute or two
  • Fry away. I usually do about 5-8 at a time, it makes it easier to flip and monitor them all
  • Let cool and enjoy

Notes

The cajun seasoning in the batter is really suttle in the final result. I like to add a little extra to the batter and some to the breadcrumbs. Our favorite is to dip them in ranch!
