I’d say a good amount of lunches around our house are prepared by Mike, but every now and then I’ll get an idea and he’ll let me roll with it. This time, Mike had made some bacon for breakfast and I asked him to set some aside for me. I knew we needed to use up an almost-too-ripe avocado that desperately needed to be eaten before it spoiled. So what would I put with avocado and bacon? Chicken or Turkey. And ranch. Lots of ranch. Our little one has been on a sushi kick for the past 2 years, so I thought we could make her a little faux sushi for fun, thus the wraps. Honestly, there are a million different things you can do with this general idea. I will probably post other variations, but here I’ll show you what I made today, Chicken Avocado Bacon Wrap.
I like my tortillas soft and warm, so I make a paper towel sandwich. Get two paper towels wet, and wring them out so they’re just damp. Then layer on a plate paper towel- tortillas – paper towel. Microwave 10-15 seconds. Then we spread the ranch all across the tortillas. Mike like spicy everything, so I mix a few drops of Sweet Chipotle hot sauce into his ranch before I spread it on. Then it’s just a matter of piling everything on there. Cheese. Chicken (fully cooked and chopped). Bacon (fully cooked and chopped). I like to salt and pepper the chicken and bacon.
Then Garnish with the veggies. Here, I went with lettuce and avocado (sliced), but you can throw in tomatoes, olives, pickles, whatever you like. If my memory from working in a deli serves me right, you don’t want the onion on this one. It doesn’t compliment ranch dressing that great. But, that’s up to you!
Pictured, I have Mike’s on the right and the left is for our little one. She doesn’t like cheese (I know, weirdo…), and she has a little less toppings so I can fold it even tighter.
Then you either make a burrito – or sushi!
To burrito your wrap, fold and tuck two opposite sides inward, then roll from one of the untucked sides. For the sushi, do the same, but you want to roll it very tight so it’s a thinner looking burrito. Then cut into 6 or 7 equal pieces. Again, I did the sushi cut for our little one, just for funsies.

Chicken Avocado Bacon Wrap
Ingredients
- 4 Tortillas
- 1/2 Cup Ranch Dressing
- 4 Slices Cheddar Cheese
- 8 Chicken Strips cooked and chopped
- 8 Strips Bacon cooked and chopped
- Salt & Pepper to taste
- 1 Avocado cut and sliced
- Parsley or Veggies to Garnish
Instructions
- Place a damp paper towel on a plate, top with 4 tortillas, and another damp paper towel.
- Microwave 10-15 seconds.
- Spread ranch across the tortillas.
- Layer cheese, chicken and bacon.
- Salt and pepper over the chicken and bacon, to taste.
- Garnish with avocado & preferred veggies (lettuce, tomato, etc.)
- Fold wrap like a burrito. Tuck 2 opposite ends in, and roll.
